Thai Tea Recipe

Made Thai iced tea today, a more complicated recipe than last time.

Thai Iced Tea

1 gallon water, boiling

1 cup ceylon tea leaves

1 tablespoon vanilla powder

3 anise stars

1 stick cinnamon

1.5 cup sugar

2:1 mixture of 2% milk to coconut milk, or only whole milk, or only condensed milk

Boil the tea leaves, vanilla powder, anise, and cinnamon for 5 minutes, then simmer for another 20 minutes.  Leave on the stovetop to cool to a managable temperature (still warm).  Add sugar and mix.  Remove cinnamon sticks right before you pour into large jars/bottles, with metal strainer to remove loose matter.  Cap and refrigerate.  For each glass, pour chilled tea concentrate over ice, about 3/4 full, and then top with milk(s) mixture.
